Brunch Institution Offers Gluten-Free Options

An iconic Jewish Deli in Los Angeles is keeping up with the times and revitalizing their menu to include options for modern diners.  This means removing some old menu items that are no longer selling and adding many gluten-free items which diners have been asking for.

Canter's Deli is an 82 year old LA institution and will now offer gluten-free bagels, gluten-free Matzoh, gluten-free hamburger buns and more.

This is great news for the gluten-free and health conscious diners in LA!

Italy Makes World's Largest Pizza..And It's Gluten-Free

Italy has reclaimed its title as the world's biggest pizza maker and this time the pizza was gluten-free!  The massive pie measured 130 feet across and and was made by 5 chefs over the course of 48 hours.  It took 5000 separate batches and 19,800 pounds of gluten-free flour.

Festival of Lights...and Latkes

Hanukkah is here and that means delicious fried foods to celebrate the oil that stayed lit for 8 days when it should have lasted only 1 day.  Traditionally this means doughnuts and potato latkes! 

Potato latkes are a delicious meal that can be hard for non gluten eaters to eat at restaurants because they are usually thickened with flour or matzoh meal.  To get around this make them yourself at home and use a bit of extra potato starch or your favorite gluten-free flour blend to help hold the potato together.  Serve with applesauce and sour cream and you are good to go!

Insiders Tips to Going Gluten-Free

When you first go gluten-free it may feel a bit overwhelming.  Hopefully some of these tips can help alleviate the stress and help transition you into a delicious, healthy and nutritious gluten-free diet!

Try traveling with your own condiments so you don't get to a restaurant and realize they don't have gluten-free versions of your favorites such as soy sauce.  Keeping a few packets in your purse can be a big help. 

If the rest of your family does not have to keep a gluten-free diet then there may be issues with cross contamination - toasters in particular can be a breeding ground for crumbs to mingle.  Getting a dedicated toaster or using toaster bags can be a big help to make sure that you don't get sick and the rest of your family can eat their full gluten toast.

Dignose Celiac By Swalloping a Capsule

Doctors are researching whether they can replace a typical biopsy procedure to diagnose Celiac Disease with a video capsule endoscopy (VCE).  Right now doctors are using the VCE technology to diagnose adenocarcinoma, lymphoma or refractory celiac disease.

In a recent study doctors used VCE to study 8 patients and found after the procedure that all 8 showed signs of mucosal changes of villous atrophy.  After treatment of a gluten-free diet, 7 of the patients showed improvement.

Does Breastfeeding Help Prevent Development of Celiac Disease?

New research is being conducted to see if the rate of Celiac Disease in infants and children is affected by new mothers breast feeding their young.  As of now data from five case control studies shows that breastfeeding at the time of first introduction to gluten could help lower the risk of Celiac Disease as compared to feeding with formula.  However studies have also been inconclusive and don't give steadfast results.

Researches are also looking into whether the age of first introduction to gluten has an effect on the prevalence of Celiac Disease.

How Do You Test for Celiac Disease?

There are some new ways to help test for Celiac Disease and gluten-sensitivity that may make diagnoses easier.  If you have Celiac you may go get a traditional blood test though they are not always accurate and could give a false reading.  A biopsy is the truest way to test for Celiac though some find the procedure too much of a hassle to go through.

A saliva test can also help test for Celiac or gluten sensitivity though the tests can also be unreliable. Additionally, these tests look at the genes for Celiac and only determine if you may develop the disease rather than if you actually have it. Finally, a stool test could be used to diagnose Celiac Disease, though the effectiveness is still under review.

If you suspect you have Celiac Disease, consult with your doctor to determine the best way to get tested.  Remember that you shouldn't begin a gluten-free diet until after the test since you must be consuming gluten for results to be more accurate.
